ABSTRACT

Inseguridad alimentaria, malnutrición por exceso, patrones alimentarios poco saludables e insostenibles y encarecimiento diferencial de los alimentos más nutritivos, son los factores que intervienen en el complejo panorama alimentario de la población argentina y constituyen sendos desafíos contemporáneos que requieren de cambios en la forma en que se producen, distribuyen, comercializan y consumen los alimentos. Objetivo. Diseñar un modelo de cambios dietarios de transición alimentaria adecuado en términos nutricionales y adaptado a las particularidades del escenario local. Materiales y Métodos. Sobre las principales brechas de excesos dietarios del patrón alimentario argentino se diseñó una matriz de cambios dietarios, considerando tres dimensiones: cantidades, ocasiones y diversificación, transicionales hacia el modelo de referencia (EAT-Lancet) y se determinaron las implicancias económicas del proceso de cambio dietario propuesto. Resultados. Se identificaron 20 estrategias de adaptación dietaria para acortar parcialmente las brechas de carnes (máximo 25%), alimentos feculentos (máximo en torno a ⅕) y sus productos derivados; priorizando aquellos frescos, estacionales y de cercanía. La combinación de cambios dietarios implicaría un ahorro neto de 11% comparado con una canasta saludable. Conclusión. La transición alimentaria hacia modelos más saludables y sostenibles debe considerar cambios flexibles, progresivos y factibles; resguardando los factores socioculturales característicos de la población argentina. Su implementación y mantenimiento requiere de políticas públicas efectivas y voluntad de los diversos actores involucrados, incluyendo a los propios consumidores(AU)


Introduction. NFood insecurity, overnutrition, unhealthy and unsustainable dietary patterns and disproportionate increase in the cost of nutritious foods are the factors that play an important role in the complex nutritional food landscape of the Argentine population and represent contemporary challenges that require changes in the way food is produced, distributed, marketed, and consumed. Objective. Design a model of dietary transition changes that is nutritionally adequate and adapted to the specificities of local scenario. Materials and methods. Regarding the main excesses in the dietary pattern of the Argentinean population, a matrix of dietary changes was designed, considering three dimensions: quantities, occasions and diversification, transitioning towards the reference model (EAT-Lancet). The economic implications of the change process were determined. Results. 20 dietary adaptation strategies were identified to partially reduce the gaps in meat (maximum 25%), starchy foods (maximum around ⅕) and their derivatives products; prioritizing those that are fresh, seasonal and locally sourced products. The combination of dietary changes would imply a net savings of 11% compared to a healthy food basket. Conclusion. The dietary transition towards healthier and more sustainable models must consider flexible, progressive and feasible changes; the sociocultural factors characteristic of the population. Its implementation and maintenance requires effective public policies and the willingness of the various actors involved, including consumers themselves(AU)

ABSTRACT

Inca civilization is a subject of great fascination due to its rapid development and successful oral aging centuries ago. Their diet was primarily plant-based, with lean animal protein, nuts, and seeds, and lacked fermentable sugars, preventing non-communicable diseases, such as caries and periodontal diseases. Developing national ageing policies and strategies to improve oral functionality and tackle economic barriers to a balanced diet, ensuring better nutrition and quality of life for older people are necessary to achieve Sustainable Development Goals (SDGs), with the World Health Organization estimating its necessity in meeting 12 of the 17 SDGs. Such policies would also honor our native ancestors.

ABSTRACT

El objetivo de esta investigación es diseñar y validar una escala para medir la alfabetización alimentaria entre estudiantes universitarios. Su validez se basó en análisis de contenido, de consistencia interna, factorial exploratorio y factorial confirmatorio, aplicados sobre datos correspondientes a estudiantes universitarios de 18 a 25 años, de los programas de administración y nutrición de una universidad mexicana. Los resultados indican que medir la alfabetización alimentaria entre estudiantes universitarios debe considerar cuatro componentes: la selección de insumos y alimentos, el consumo de alimentos con calidad nutricional y en la cantidad apropiada, las actitudes acerca de lo importante que es desarrollar hábitos de alimentación saludables y la percepción del control que las personas tienen sobre su propia alimentación. Una de las principales limitaciones de esta investigación consiste en que la muestra es muy específica, por lo cual, la validación de la escala entre muestras estudiantiles más amplias es una oportunidad para desarrollar futuras investigaciones. Los hallazgos obtenidos son de interés para académicos que participan en el diseño de programas educativos enfocados en el desarrollo de hábitos alimenticios saludables, así como de personas responsables de instrumentar políticas, programas e iniciativas en materia de nutrición, alimentación y salud tendientes a mejorar el bienestar general de la población.


This paper aims to design and validate a scale to measure food literacy among university students. We performed content, internal consistency, exploratory factor, and confirmatory factor analyses, based on data corresponding to management and nutrition university students aged 18-25, at a Mexican university. Our results indicate that measuring food literacy among university students must consider four components: the selection of supplies and foods, the consumption of meals with nutritional quality and in the appropriate quantity, attitudes about the importance of developing healthy eating habits, and the perception of control that consumers have about their diet. One of the main limitations of this study is that the sample is very specific, so the validation of the scale among larger student samples is an opportunity to develop future research. Our findings are of interest to academics who participate in the design of educational programs focused on the development of healthy eating habits, as well as to the designers and developers of policies, programs, and initiatives regarding nutrition, food, and health aimed at improving general well-being.

ABSTRACT

Los estudiantes universitarios suelen presentar una dieta poco saludable por estar expuestos, entre otros factores, a situaciones estresantes que se han visto exacerbadas por la pandemia del COVID-19. Para enfrentar el estrés se pueden utilizar diferentes estrategias, sin embargo, se desconoce si los estudiantes universitarios han utilizado dichas estrategias y/o cambiado sus hábitos alimentarios como mecanismo para manejar el estrés durante la pandemia. Este estudio evaluó si el estrés generado durante la pandemia de COVID-19 impactó en los hábitos alimentarios de los estudiantes universitarios y en las estrategias de afrontamiento para enfrentar el estrés. La muestra fue no probabilística y estuvo compuesta por 236 estudiantes universitarios de dos instituciones universitarias chilenas. Se aplicó una encuesta en línea que evaluó consumo de alimentos no saludables, estrés, estrategias de afrontamiento, e información sociodemográfica. Los datos se analizaron mediante regresión binomial negativa. El análisis reveló un aumento en el consumo de alimentos poco saludables, especialmente en estudiantes con altos niveles de estrés. Las estrategias utilizadas se agruparon en 'evitación emocional' y 'mantenerse ocupado'. Se evidenció que los estudiantes más jóvenes preferían las estrategias de evitación emocional y había una fuerte asociación entre las estrategias de "mantenerse ocupado" con un menor consumo de alimentos poco saludables. Estos resultados respaldan el desarrollo de estrategias para el manejo del estrés y de esta forma evitar el consumo excesivo de alimentos poco saludables durante períodos estresantes como la pandemia de COVID-19.


College students often have an unhealthy diet due to exposure to, among other factors, stressful situations that have been exacerbated by the COVID-19 pandemic. Different strategies can be used to cope with stress; however, it is unknown whether university students have used such strategies and/or changed their dietary habits as a mechanism to manage stress during the pandemic. This study assessed whether the stress generated during the COVID-19 pandemic impacted college students' eating habits and coping strategies to deal with stress. The sample was non-probabilistic and was composed of 236 university students from two Chilean university institutions. An online survey was administered that assessed unhealthy food consumption, stress, coping strategies, and sociodemographic information. Data were analyzed using negative binomial regression. The analysis revealed an increase in the consumption of unhealthy foods, especially in students with high levels of stress. The strategies used were grouped into 'emotional avoidance' and 'keeping busy'. It was evident that younger students preferred emotional avoidance strategies and there was a strong association between 'keeping busy' strategies with lower consumption of unhealthy foods. These results support the development of stress management strategies to avoid excessive consumption of unhealthy foods during stressful periods such as the COVID-19 pandemic.

ABSTRACT

Una alimentación saludable en la escuela es fundamental para el crecimiento y desarrollo de los estudiantes, para su bienestar y su buen rendimiento escolar. El Programa Nacional de Alimentación Escolar (PNAE) de Brasil, en este sentido, pretende ofrecer una alimentación variada, segura y que respete la cultura, las tradiciones y los hábitos alimentarios saludables. Ante el escenario actual de malnutrición y de cambio climático, caracterizado por la Sindemia Global, desde diversos niveles gubernamentales se señala la importancia de incluir en los comedores escolares alimentos de la sociobiodiversidad, concepto definido en el Plan Nacional de Promoción de las Cadenas de Productos de la Sociobiodiversidad en Brasil en 2009. Objetivo. El estudio que se presenta tiene como objetivo evaluar la aceptabilidad de las preparaciones a base de productos de la sociobiodiversidad con estudiantes de escuelas públicas de Rio Grande do Sul (RS) y Rio Grande do Norte (RN), Brasil. Materiales y métodos. El trabajo forma parte de un estudio transversal y multicéntrico, con pruebas de adherencia y aceptabilidad de preparaciones a base de alimentos de la sociobiodiversidad realizado con estudiantes de escuelas públicas de RS y RN. Resultado. Se observó que las preparaciones obtuvieron excelentes porcentajes de adhesión, 100% en ambos estados, y de aceptabilidad, oscilando entre el 82 y el 97% de aceptación de las preparaciones. Conclusión. La alimentación puede ser utilizada en el ámbito escolar a partir de su potencial dialógico y socioeducativo para la transformación social y la promoción de la cohesión social en torno a dietas más sostenibles(AU)


Healthy nutrition at school is fundamental for the growth and development of students, for their well-being and good school performance. Brazil's National School Feeding Programme (PNAE) aims to offer a varied and safe diet that respects culture, traditions and healthy eating habits. Faced with the current scenario of malnutrition and climate change, characterised by the Global Syndemic, various levels of government have highlighted the importance of including sociobiodiverse foods in school feeding, a concept defined in the National Plan for the Promotion of Socio-biodiverse Product Chains in Brazil in 2009. Objective. The aim of this study is to evaluate the acceptability of preparations based on sociobiodiversity products with students from public schools in Rio Grande do Sul (RS) and Rio Grande do Norte (RN), Brazil. Materials and methods. The study is part of a cross-sectional, multicentre study, with adherence and acceptability tests of preparations based on sociobiodiversity foods carried out with students from public schools in RS and RN. Results. It was observed that the preparations obtained excellent percentages of adherence, 100% in both states, and acceptability, ranging from 82 to 97% of acceptance of the preparations. Conclusion. School feeding can be used in the school environment from its dialogical and socio-educational potential for social transformation and the promotion of social cohesion around more sustainable diets(AU)

ABSTRACT

Introducción: el consumo de frutas y verduras como proceso protector de la salud se ha analizado principalmente desde la perspectiva de los estilos de vida individuales; sin embargo, procesos de tipo estructural como los modelos de producción de alimentos y las políticas de alimentación determinan su producción, disponibilidad y acceso. Se planteó como objetivo analizar los procesos de determinación social del con- sumo de frutas y verduras en el municipio de Florida (Valle del Cauca, Colombia). Materiales y métodos: estudio cualitativo, tipo estudio de caso, con enfoque de determinación social. Incluyó revisión documental de políticas alimentarias y grupos de discusión con actores clave; el análisis de contenido permitió explicitar mensajes y discursos. Resultados: en la dimensión general, resaltan como procesos críticos de determinación, que limitan la producción y el acceso de frutas y verduras, el uso y tenencia inequitativa de la tierra y la explotación de las fuentes hídricas, y unas políticas que desde la lógica de libre mercado reducen cada vez más las estrategias locales de autosostenimiento y autoconsumo. En la dimensión particular, el conflicto armado (como proceso crítico adverso) y los ejercicios de soberanía alimentaria (como proceso crítico favorable al consumo de frutas y verduras). Conclusiones: la política alimentaria nacional y local reconoce, de manera discursiva, las determinaciones sociales de la seguridad alimentaria, pero en la práctica privilegia estrategias focalizadas y contingentes que no apuntan a la solución de condiciones estructurales que limitan la producción, disponibilidad, acceso y, por ende, el consumo de frutas y verduras


Introduction: Fruit and vegetable consumption as a preventive health measure depends mainly on the perspective of individual lifestyle. The structural processes such as food production models and food policies determine their production, availability, and access. This study aimed to analyze the social determinants of fruit and vegetable consumption in the municipality of Florida, Valle del Cauca, Colombia. Materials and Methods: This is a qualitative case study using a social determination approach. This study includes a documentary review of food policies and discussion groups among key stakeholders. A content analysis was conducted to allow an explicit analysis of the messages and speeches. Results: In the general dimension, deemed as critical processes of determination, the unequal use and possession of land and the exploitation of water sources and policies, from the logic of the free market, increasingly reduce the local strategies for self-support and self-consumption and limit the production and access of fruits and vegetables. In the particular dimension, a critical adverse process includes the armed conflict. However, the exercise of food sovereignty favors the consumption of fruits and vegetables. Conclusion: Food policy at the national and local level discursively recognizes the social determinants of food security; however, in practice, contingent strategies that do not aim at addressing the structural conditions that limit produc- tion, availability, access and, therefore, the consumption of fruits and vegetables, should be evaluated.


Introdução: o consumo de frutas e verduras como processo de proteção à saúde tem sido analisado principalmente na perspectiva dos estilos de vida individuais, porém processos estruturais como modelos de produção de alimentos e políticas alimentares determinam sua produção, disponibilidade e acesso; o objetivo do estudo foi analisar os processos de determinação social do consumo de frutas e verduras no município da Flórida, Valle del Cauca, Colômbia. Materiais e métodos: estudo qualitativo, do tipo estudo de caso, com enfoque na determinação social; incluiu uma revisão documental de políticas alimentares e grupos de discussão com atores-chave; a análise de conteúdo permitiu explicitar mensagens e discursos. Resultados: na dimensão geral, destacam-se o uso e posse desigual da terra e a exploração dos recursos hídricos como processos determinantes críticos que limitam a produção e o acesso a frutas e verduras; e políticas que, baseadas na lógica do livre mercado, reduzem cada vez mais as estratégias locais de autossustentabilidade e autoconsumo. Na dimensão particular, destaca-se o conflito armado como processo crítico adverso, e o exercício da soberania alimentar, como processo crítico favorável ao consumo de frutas e verduras. Conclusões: a política alimentar a nível nacional e local reconhece, de forma discursiva, as determinações sociais da segurança alimentar, mas na prática privilegia estratégias focalizadas e contingentes que não visam resolver condições estruturais que limitam a produção, a disponibilidade, o acesso e, portanto, o consumo de frutas e verduras.

ABSTRACT

Abstract This study aimed to validate the frequency consumption scale (FCS) and establish cut-off points to assess changes in the eating behavior of participants in the VAMOS Program. The study was based on a community intervention conducted in 2019 in 70 Brazilian cities, with 458 adults from Primary Care. The questionnaire consisted of 12 questions about food frequency consumption. The questions were inserted into the analytical workflow, divided into the descriptive analysis, exploratory and confirmatory factor analysis (EFA), item response theory (IRT) modeling, and construction and validity of an applied questionnaire score. EFA indicated a two-factor structure, with three "healthy" (raw vegetables, fruits, and cooked vegetables) and three "unhealthy" (sugary drinks, sweets, and the replacement of meals with snacks) eating items. Items responses' probabilities indicate a daily consumption of two healthy and once or nonweekly consumption of unhealthy items. Finally, the four categories proposed for FCS can respond over time. Therefore, the FCS proposal can be used effectively for program nutrition evaluation. Furthermore, it is possible to attribute behavior change in Brazilian primary care users with six items.


Resumo Este estudo teve como objetivo validar a escala de consumo de frequência (ECF) e estabelecer pontos de corte para avaliar mudanças no comportamento alimentar dos participantes do Programa VAMOS. O estudo baseou-se em uma intervenção comunitária realizada em 2019 em 70 cidades brasileiras, com 458 adultos da Atenção Básica. O questionário era composto por 12 questões sobre o consumo de frequência alimentar. As questões foram inseridas no fluxo de trabalho analítico, divididas em análise descritiva, análise fatorial exploratória e confirmatória (EFA), modelagem da teoria de resposta ao item (TRI) e construção e validade de um escore de questionário aplicado. EFA indicou uma estrutura de dois fatores, com três itens alimentares "saudáveis" (vegetais crus, frutas e vegetais cozidos) e três "não saudáveis" (bebidas açucaradas, doces e a substituição de refeições por lanches). As probabilidades das respostas dos itens indicam um consumo diário de dois itens saudáveis e um consumo único ou não semanal de itens não saudáveis. Por fim, as quatro categorias propostas para o ECF podem fornecer respostas ao longo do tempo. A proposta do ECF pode ser usada efetivamente para avaliação nutricional do programa. Além disso, é possível atribuir a mudança de comportamento em usuários da atenção básica brasileira com seis itens.

Abstract Objectives: to estimate the prevalence of complementary feeding indicators and investigate its determinants. Methods: cross-sectional study with 12-month-old children from Vitória da Conquista, Bahia. The indicators minimum diet diversity, minimum meal frequency and minimally acceptable diet were constructed and adapted to the current recommendations of the food guide for Brazilian children under two years of age. Poisson regression analysis was used, with hierarchical entry of variables in the multivariate model. Results: the prevalence of minimum diet diversity was 38.8%, minimum meal frequency 47.9% and minimally acceptable diet 18.5%. Family income greater than one minimum wage was associated with minimal diet diversity (PR= 1.49; CI95%= 1.39-2.26); receiving guidance on complementary feeding was associated with a minimum meal frequency (PR= 1.37; CI95%= 1.05-1.78); and children who received exclusive breastfeeding for up to 6 months had significantly higher prevalences of all indicators compared to those who did not. Conclusions: low prevalence of complementary feeding indicators was observed. The variables family income, receiving guidance on complementary feeding and offering exclusive breastfeeding for six months were associated with the highest prevalence of the studied indicators.


Resumo Objetivos: estimar as prevalências de indicadores da alimentação complementar e investigar seus determinantes. Métodos: estudo transversal com crianças aos 12 meses de idade do município de Vitória da Conquista, Bahia. Os indicadores diversidade mínima da dieta, frequência mínima de refeição e dieta minimamente aceitável foram construídos e adaptados às atuais recomendações do Guia alimentar para crianças brasileiras menores de dois anos. Utilizou-se análise de regressão de Poisson, com entrada hierarquizada das variáveis no modelo multivariado. Resultados: a prevalência de diversidade mínima da dieta foi de 38,8%, de frequência mínima de refeição 47,9% e de dieta minimamente aceitável 18,5%. A renda familiar maior que um saláriomínimo foi associada a diversidade mínima da dieta (RP= 1,49; IC95%= 1,39-2,26); o recebimento de orientações sobre alimentação complementar associou-se a frequência mínima de refeição (RP=1,37; IC95%= 1,05-1,78); e as crianças que receberam aleitamento materno exclusivo até 6 meses apresentaram prevalências significativamente maiores de todos os indicadores comparadas às que não receberam. Conclusões: foram observadas baixas prevalências dos indicadores da alimentação complementar. As variáveis renda familiar, recebimento de orientações sobre alimentação complementar e a oferta de aleitamento materno exclusivo por seis meses foram associadas as maiores prevalências dos indicadores estudados.

ABSTRACT

O consumo alimentar atual, caracterizado pelo aumento da ingestão de alimentos de alta densidade calórica e baixo valor nutricional pode influenciar negativamente no estado nutricional e surgimento de agravos à saúde. Este estudo teve como objetivo avaliar a qualidade da dieta e fatores associados em pacientes adultos e idosos atendidos num ambulatório de nutrição. Trata-se de um estudo transversal realizado de maio a outubro de 2021 no ambulatório de nutrição do Instituto de Medicina Integral Prof. Fernando Figueira em Recife, Pernambuco. Foram coletadas as informações do perfil sociodemográfico e econômico, estilo de vida, variáveis clínicas e estado nutricional, no momento do atendimento nutricional (primeira consulta e/ou consulta de acompanhamento). A avaliação do consumo alimentar foi realizada por meio da análise do Índice de Qualidade da Dieta Revisado (IQDR). A amostra foi composta por 102 pacientes, e foi evidenciada uma maior frequência de excesso de peso/obesidade e risco cardiovascular muito elevado. Com relação ao IQDR, 72,6% da amostra apresentam dieta saudável. O tempo de acompanhamento foi correlacionado positivamente com a qualidade da dieta (ρ 0,199; p<0,045); e quanto à glicemia de jejum, houve uma correlação negativa com o consumo de cereais totais (ρ -0,229; p<0,050), e positiva com o consumo de leite e derivados (ρ0,265; p<0,023). No que se refere às variáveis antropométricas, evidenciou-se correlações negativas com o consumo de hortifrútis e cereais integrais. O consumo alimentar é considerado complexo e necessita da avaliação dos fatores que possam interferir no mesmo. O acompanhamento nutricional, a modificação e a melhora da qualidade da alimentação, favorecem à adoção de um estilo de vida mais saudável, relacionando-se com a prevenção e/ou o controle das doenças crônicas não transmissíveis e suas complicações.


Current food consumption, characterized by increased intake of high-density foods and low nutritional value can negatively influence nutritional status and the emergence of health problems. This study aimed to evaluate the quality of the diet and associated factors in adult and elderly patients treated in a nutrition outpatient clinic. This is a cross-sectional study conducted from May to October 2021 at the Nutrition Outpatient Unit of the Fernando Figueira Institute of Integral Medicine in Recife, Pernambuco. The information of the sociodemographic and economic profile, lifestyle, clinical variables, and nutritional status was collected at the time of nutritional consultation (first consultation and/or follow-up consultation). The evaluation of food consumption was performed through the analysis of the Diet Quality Index - Revised (DQI-R). The sample consisted of 102 patients, and there was a higher frequency of overweight/obesity and very high cardiovascular risk. Regarding DQI-R, 72.6% of the sample has a healthy diet. The follow-up time was positively correlated with the quality of the diet (ρ 0.199; p <0.045); and regarding fasting blood glucose, there was a negative correlation with the consumption of total cereals (ρ -0.229; p <0.050) and a positive correlation with the consumption of milk and derivatives (ρ 0.265; p <0.023). Regarding anthropometric variables, negative correlations with the consumption of whole grains and cereals was demonstrated. Food consumption is considered complex and requires the evaluation of factors that may interfere with it. Nutritional monitoring, modifying, and improving the quality of food, favors the adoption of a healthier lifestyle, which relates to the prevention and/or control of chronic non-communicable diseases and their complications.

Trata-se de um estudo transversal com dados da segunda onda (9.949 participantes) do Estudo Longitudinal da Saúde dos Idosos Brasileiros (ELSI-Brasil), de 2019-2021. Foram avaliados: consumo alimentar semanal de fruta/hortaliça, feijão e peixe; autopercepção do consumo de sal; ambiente alimentar (disponibilidade de fruta/hortaliça na vizinhança e produção própria de alimentos); e parâmetros antropométricos objetivos (índice de massa corporal [IMC] e circunferência da cintura [CC]). As análises foram ajustadas por escolaridade. Em comparação com as áreas urbanas, observaram-se nas rurais: menor consumo de fruta/hortaliça em cinco dias da semana ou mais (74,6% vs. 86,4%) e maior consumo adequado de sal (96,8% vs. 92,1%) - diferenças observadas para homens e mulheres. A CC elevada foi menor nas áreas rurais (61,9% vs. 68%), sendo significativa somente para homens. Houve menor disponibilidade de fruta/hortaliça na vizinhança (41,2% vs. 88,3%) e maior produção própria de alimentos (38,2% vs. 13,2%) nas áreas rurais. O consumo de fruta/hortaliça em cinco dias da semana ou mais foi menor nas áreas rurais quando houve disponibilidade de fruta/hortaliça na vizinhança e ausência de produção própria de alimentos. Há diversidade alimentar e nutricional entre áreas urbano-rurais. O incentivo ao consumo de fruta/hortaliça nas áreas urbanas deve considerar a disponibilidade de fruta/hortaliça na vizinhança, enquanto nas áreas rurais deve ser em conjunto com a produção do próprio alimento. O consumo adequado de sal e a manutenção da CC nos valores ideais devem ser reforçados nas áreas urbanas.


El objetivo fue identificar diferencias alimentarias y antropométricas entre adultos mayores brasileños (≥ 50 años) que viven en áreas urbano-rurales. El consumo de frutas/verduras en ≥ 5 días/semana fue menor en las zonas rurales cuando hubo frutas/verduras disponibles en el barrio y ausencia de producción del propio alimento. Existe una diversidad alimentaria y nutricional entre las zonas urbanas y rurales. Fomentar el consumo de frutas/verduras en las zonas urbanas debe tener en cuenta la disponibilidad de frutas/verduras en el barrio, mientras que en las zonas rurales debe tener en cuenta también la producción del propio alimento. Se debe reforzar el consumo adecuado de sal y el mantenimiento de la CC en valores ideales en las zonas urbanas.


This study aimed to identify dietary and anthropometric differences in older Brazilian adults (≥ 50 years old) living in urban-rural areas. This is a cross-sectional study with data from the second wave (9,949 participants) of the Brazilian Longitudinal Study of Aging (ELSI-Brazil) from 2019-2021. Analyses were adjusted for schooling level. Compared to urban areas, rural areas show lower consumption of fruit/vegetables five days or more per week (74.6% vs. 86.4%) and greater adequate salt intake (96.8% vs. 92.1%) - differences we observed for men and women. Rural areas showed lower high WC (61.9% vs. 68%), significant only for men. Considering food environment, rural areas had lower fruit and vegetable availability in the neighborhood (41.2% vs. 88.3%) and higher self-production of food (38.2% vs. 13.2%). We observed a lower consumption of fruit/vegetables five days or more per week in rural areas with fruit/vegetable availability in the neighborhood and no self-production of food. Urban and rural areas show food and nutritional diversity. Incentives for fruit or vegetable consumption among residents in urban areas should consider the greater availability of these foods in their neighborhood, whereas, in rural areas, self-production of food should be encouraged. Adequate salt intake and ideal WC maintenance should be reinforced in urban areas.

Objetivo. Evaluar los conocimientos sobre alimentación saludable (AS) de los estudiantes del área de la salud y los factores asociados al entorno universitario. Materiales y métodos. Se trata de un estudio transversal con 512 estudiantes universitarios (≥ 18 años) matriculados en nueve carreras de grado en salud. Se llevó a cabo de abril a noviembre de 2017. Se aplicaron el Instrumento Evaluativo de la promoción de la salud en la universidad y el Cuestionario Internacional de Actividad Física. Además, se midió el peso, talla y perímetro abdominal. Se realizaron análisis bivariados y multivariados utilizando SPSS versión 23.0. Resultados. Se encontró que la mayoría de los estudiantes universitarios de las nueve carreras de salud tenían conocimientos insuficientes sobre alimentación saludable (71,9%; n=368). Sin embargo, la mayor proporción de estudiantes con conocimientos suficientes se encontraron en el área de nutrición (15,3%; n=22), seguidos de aquellos del área de educación física (12,5%; n=18). El menor porcentaje de estudiantes con conocimientos suficientes se encontró en la carrera de medicina (8,3%; n=12). En el análisis multivariado se evidenció que el conocimiento suficiente sobre alimentación saludable estaba relacionado con la participación en actividades de alimentación saludable (p=0,012; RP=1,94), participación en actividades que aborden la autoestima y el autoconocimiento (p=0,046; RP=0,59) y con tener exceso de peso (p=0,036; RP=1,53). Conclusión. Se evidenció un bajo porcentaje de estudiantes de salud con conocimientos suficientes sobre alimentación saludable. Sin embargo, la participación en actividades de alimentación saludable, autoestima y autoconocimiento en la universidad logró mejorar el nivel de conocimiento. Se recomienda el desarrollo de proyectos universitarios que abarquen la tríada psicológica, alimentaria y corporal, involucrando así todas las carreras de salud, con el objetivo de mejorar la salud y la calidad de vida de los universitarios.


Objective. To assess the healthy eating (HE) knowledge of health students and the factors associated with the university environment. Materials and methods. This was a cross-sectional study of 512 university students (≥ 18 years) enrolled in nine undergraduate health careers. It was conducted from April to November 2017. The Instrument for Assessment of Health Promotion in Universities and the International Physical Activity Questionnaire were used. In addition, we measured weight, height and waist circumference. Bivariate and multivariate analyses were carried out with SPSS version 23.0. Results. We found that most university students from the nine health careers had insufficient knowledge about healthy eating (71.9%; n=368). However, the highest proportion of students with sufficient knowledge was found in the career of nutrition (15.3%; n=22), followed by those in the physical education career (12.5%; n=18). The lowest percentage of students with sufficient knowledge was found in the career of medicine (8.3%; n=12). Multivariate analysis showed that sufficient knowledge about healthy eating was related to participation in healthy eating activities (p=0.012; PR=1.94), participation in activities addressing self-esteem and self-knowledge (p=0.046; PR=0.59) and being overweight (p=0.036; PR=1.53). Conclusion. A low percentage of health students had sufficient knowledge about healthy eating. However, participation in healthy eating, self-esteem and self-knowledge activities at the university managed to improve the level of knowledge. We recommend the development of university projects that include the psychological, food and body triad, thus involving all health careers, with the aim of improving the health and quality of life of university students.

Abstract We aimed to analyze the association between sugar-sweetened beverage (SSB) consumption with healthy food markers (HFM) and unhealthy food markers (UFM) as well as their impact on these markers in the Brazilian population's diet. Food consumption during two nonconsecutive days of food records of individuals aged ten years or over were investigated in the National Dietary Survey 2008-2009 (n = 32,900) and the caloric contributions of HFM and UFM were distributed according to the categories of SSB consumption. Multiple linear regression was applied to analyze the associations between the consumption of SSB and the impact of a 50% reduction in portion size and dietary markers. The contribution of energy from HFM was higher among individuals who did not consume SSB. A 50% reduction in the average portion of SSB in the population would imply a 6% decrease in energy contribution to the diet and 12% decrease in total energy from added sugar. It would increase the consumption of HFM and dietary fiber by 7g and 4g, respectively. A 50% reduction in SSB serving size is a strategy that could improve the quality of the diet, increase the consumption of HFM and fiber and reduce the consumption of sugar and UFM.


Resumo Analisar a associação entre o consumo de bebidas adoçadas (BA) e marcadores da alimentação saudável ​​(MAS) e não saudável ​​(MANS), bem como seu impacto sobre esses marcadores na dieta da população brasileira. Os dados de consumo alimentar foram analisados ​​por meio de registros alimentares de dois dias não consecutivos em indivíduos com 10 anos ou mais de idade investigados no Inquérito Nacional de Alimentação (INA) de 2008-2009 (n = 32.900). As BA, as contribuições calóricas dos MAS e MANS foram distribuídas de acordo com as categorias de consumo das BA. A regressão linear múltipla foi aplicada para analisar associações entre o consumo de BA e o impacto de uma redução de 50% no tamanho da porção e marcadores da alimentação. A contribuição da energia dos MAS foi maior entre os indivíduos que não consumiam BA. A redução de 50% na porção média das BA na população implicaria uma diminuição de 6% na contribuição de energia da dieta, de 12% na energia total do açúcar de adição e teria um aumento no consumo de MAS e fibra alimentar em 7g e 4g, respectivamente. A redução de 50% no tamanho da porção das BA seria uma estratégia para melhorar a qualidade da dieta, aumentar o consumo de MAS e fibra e reduzir o consumo de açúcar e MANS.

ABSTRACT

The most prevalent malnutrition issues in Sri Lanka are the protein-energy malnutrition (PEM), vitamin A deficiency, and iron deficiency. Childhood and adolescence are the crucial stages of life which mostly susceptible to malnutrition since their major physiological and psychological changes take place. Although a balanced, nutritious diet is essential to them, present socio-economical and higher academic expectations have created a complex environment that often pushes them towards junk foods and unhealthy snacks. The objective of the present study was to develop ready-to-reconstitute convenient mid-day meals in three categories of chicken, fish, and soya, which match to the Sri Lankan local culinary style, with acceptable sensory properties to upgrade the nutritional status of school children (5-10 yrs) and adolescents (11-19 yrs). Those mid-day meals were designed according to the Food-Based Dietary Guidelines (FBDG) of Sri Lanka. The selected ingredients were processed; rice to instant rice, vegetables to dehydrated vegetables, and protein source of chicken, fish, and soya to pre-cooked sterilized curry pouches. The convenient mid-day meal packages were prepared using three portions of instant rice containing 10% of green gram flakes, dehydrated vegetables, and retorted curry mix respectively. Labeling was performed according to the type of curry mix inserted into the package as Chicken, Fish, or Soy mid-day meals. Physicochemical and sensorial properties of meals were evaluated. The caloric value of mid-day meals ranged 575 - 640.82 kcal. The protein content of meals ranged from 25.88 g to 32.68g and there was no significant difference (p<0.05) between protein contents in chicken and fish meals. The fat contents and dietary fiber contents significantly (p<0.05) differed and the highest contents of fat (3.15 g) and dietary fiber (4.40 g) were observed in chicken meal and soy meal respectively. The mineral contents of tested meals significantly differed (p<0.05) and the significant highest Ca, Fe, K, Fe, and P were observed in soya mid–day meals. The highest mean rank scores for all sensory attributes in terms of odor, appearance, texture, taste, and overall acceptability were observed in the chicken mid-day meal. Ready-to-reconstitute mid-day meals in three categories of chicken, fish, and soya, which could match to the Sri Lankan local culinary style, were developed with acceptable sensory properties.

Objetivo: Descrever e comparar hábito nutricional, prática de atividade física e índice de massa corporal (IMC) de crianças e adolescentes com síndrome de Down acompanhados em ambulatório especializado de um hospital terciário no sul do Brasil. Método: Estudo transversal realizado a partir da análise de prontuário de pacientes com síndrome de Down em idade escolar e adolescentes acompanhados em ambulatório especializado do Complexo Hospital de Clínicas da Universidade Federal do Paraná. A alimentação foi considerada adequada se consistisse em alimentos de todos os grupos nas três refeições principais e um ou dois lanches e água nos intervalos. Sedentarismo foi definido como tempo de atividade física inferior a 300 minutos por semana. O estado nutricional foi avaliado usando as curvas de IMC da Organização Mundial da Saúde, 2007.Resultados: O estudo incluiu 755 pacientes, sendo 236 (31,3%) crianças e 519 (68,7%) adolescentes. Sobrepeso e obesidade foram observados em 10,7% e 14,8% da população, respectivamente, sem diferença significativa entre os gêneros. Alimentação inadequada foi observada em 34,6% e sedentarismo em 23,7% dos pacientes. IMC elevado foi observado em 20,3% das crianças e 27,9% dos adolescentes (p=0,026). Observou-se sedentarismo em 29,5% dos adolescentes e 11% das crianças (p<0,001). Alimentação inadequada também foi mais prevalente em adolescentes, porém sem diferença estatística. Pacientes com IMC elevado, em comparação com eutróficos, tiveram maior prevalência de alimentação inadequada e sedentarismo, com significância estatística. Nesse subgrupo, o sedentarismo foi observado em 25% das crianças e 57,2% dos adolescentes (p<0,001). Conclusão: Adolescentes com síndrome de Down apresentam maiores taxas de IMC elevado e sedentarismo comparados com crianças. Estudos específicos em educação em saúde para essa população são necessários com o objetivo de promover hábitos de vida saudáveis e prevenir a obesidade com efetividade. [au]


Objective: To describe and compare the nutritional habits, physical activity, and body mass index (BMI) of children and adolescents with Down syndrome followed up in the specialized outpatient clinic of a tertiary hospital in southern Brazil. Method: Cross-sectional study conducted from the analysis of medical records of patients with Down syndrome at school age and adolescents followed up at the Complexo Hospital de Clínicas of the Universidade Federal do Paraná. The diet was considered adequate if it consisted of foods from all groups in the three main meals and one or two snacks and water in the intervals. A sedentary lifestyle was defined as physical activity time of fewer than 300 minutes per week. Nutritional status was assessed using BMI curves from the World Health Organization, 2007. Results: The study included 755 patients, of whom 236 (31.3%) were children and 519 (68.7%) were adolescents. Overweight and obesity were observed in 10.7% and 14.8% of the population, respectively, without significant gender differences. Inadequate diet was observed in 34.6% and sedentarism in 23.7% of the patients. High BMI was observed in 20.3% of children and 27.9% of adolescents (p=0.026). Sedentarism was observed in 29.5% of adolescents and 11% of children (p<0.001). Inadequate diet was also more prevalent in adolescents but without statistical difference. Patients with high BMI, compared to eutrophic patients, had a higher prevalence of inadequate diet and sedentarism, with statistical significance. In this subgroup, sedentarism was observed in 25% of children and 57.2% of adolescents (p<0.001). Conclusion: Adolescents with Down syndrome have higher rates of high BMI and sedentarism compared to children. Specific studies in health education for this population are necessary to promote healthy lifestyle habits and effectively prevent obesity. [au]

Este estudo verificou os efeitos de uma ação educativa via rede social no consumo alimentar, conhecimento em alimentação e nutrição e nos fatores que facilitam e dificultam a adoção de uma alimentação saudável entre universitários de um Centro Universitário de São Paulo. Trata-se de estudo de intervenção, com aplicação de questionário antes e depois da ação educativa. Participaram 141 universitários entre 18 e 56 anos e classe socioeconômica B (46,81%). 39,72% estavam com excesso de peso, 76,60% foram classificados em "Atenção" referente ao consumo alimentar e mais de 50% tinham moderado conhecimento em nutrição. O principal dificultador para se ter uma alimentação saudável foi o custo elevado dos alimentos. Conclui-se que os efeitos da ação educativa foram positivos na redução do Índice de Massa Corporal, aumento na pontuação do consumo alimentar e do conhecimento em nutrição. Houve aumento de comportamento adequado para oito questões do consumo alimentar.


This study verified the effects of an educational action using social network on food consumption, knowledge of food and nutrition and factors that facilitate and hinder the adoption of healthy eating, among university students at a University Center in São Paulo. It is an intervention study, with the application of a questionnaire before and after the educational action. 141 university students between 18 and 56 years old and socioeconomic class B (46,81%) participated. 39.72% were overweight, 76.60% were classified as "Attention" regarding food consumption and more than 50% had moderate knowledge of nutrition. The main obstacle to healthy eating was the high cost of food. It is concluded that the effects of the educational action were positive in reducing the Body Mass Index, increasing the score of food consumption and knowledge in nutrition. There was an increase in appropriate behavior for eight issues of food consumption.

Resumo: Este ensaio tem como objetivo refletir sobre o direito humano à alimentação adequada, de forma universal e permanente, ante a pobreza e a desigualdade social. Expressa a dificuldade das sociedades para eliminar o espectro da fome. Argumenta-se que o direito humano à alimentação adequada dificilmente será materializado sem a superação da fome, da pobreza e da desigualdade social, fenômenos interdependentes e que se inter-relacionam, inerentes e necessários à sociabilidade capitalista.


Abstract: This essay aims to reflect on the human right to proper food, in an universal and permanent way, in the face of poverty and social inequality. It expresses the difficulty of societies to eliminate the spectrum of starvation. It is argued that the human right to adequate food is unlikely to be materialized without overcoming hunger, poverty and social inequality, interdependent and interrelated phenomena, inherent and necessary to capitalist sociability.

@#Introduction: Poor diet quality is a major issue, and health concerns may be related to diet. Mothers with young children usually have their meals at home; thus, home food environment plays a role in determining dietary behaviours. This study examined the association between health concerns and diet quality among mothers; additionally, the effect of home food environment on this relationship was assessed. Methods: This cross-sectional study comprising 229 mothers (aged 19–49 years) with young children was conducted in an urban slum area in North Jakarta. Data were collected via interviews using a structured questionnaire. The General Health Interest Scale and Consumer Behaviour Questionnaire were used to assess health concern and home food environment, respectively. The 24-hour dietary recall method was used to calculate the Diet Quality Index-International (DQI-I) score. Spearman’s correlation, multiple linear regression, and path analysis were used to analyse the data. Results: Majority of the mothers had poor diet quality (mean DQI-I score, 41.44/100). No significant correlation between health concern and diet quality was observed. After adjusting for age, the relationship between health concern and diet quality was not mediated by vegetables availability or eating out frequency (indirect effect=0.012; p=0.096). Multiple linear regression analysis revealed age as a significant predictor of diet quality (B=0.196; p=0.024). Conclusion: Diet quality among mothers of young children differed with age and was related to both health concerns and home food environment. Thus, the development of strategies to promote healthy eating based on different age groups is warranted.

Este estudo objetivou caracterizar a percepção de estudantes sobre a implementação da Lei 5.146/2013, que visa à promoção da alimentação saudável nas escolas do Distrito Federal, identificando as barreiras e os facilitadores existentes para adotá-la e as perspectivas para a implementação de ações de Educação Alimentar e Nutricional (EAN) no ambiente escolar. Participaram 52 adolescentes do 9º ano de três escolas, públicas e privadas, distribuídos em seis grupos focais. Seguiu-se roteiro semiestruturado com perguntas, validadas pela técnica de Delphi, para conhecer o que era vendido e consumido nas cantinas, segundo os adolescentes, se eles conheciam a lei, e avaliar barreiras e facilitadores para colocar a legislação em funcionamento no ambiente escolar. Por fim, apresentou-se uma situação fictícia aos estudantes em que estes conduziriam ações de EAN para implementar a lei. Os debates foram gravados, transcritos, e agrupadas as falas semelhantes pela análise de conteúdo de Bardin. Os adolescentes consideraram positiva a lei das cantinas, mas pontuaram que estas ainda não haviam se adequado à legislação. Identificaram como barreiras o preço dos alimentos saudáveis e a baixa divulgação da lei e, como facilitadores, a escola e a família. Para EAN, sugeriram meios de divulgação inovadores, como as redes sociais e a utilização de figuras e cores para chamar à atenção do leitor. Apesar de bem recebida pelos adolescentes, a simples promulgação de uma lei não é suficiente para alterar práticas alimentares já adotadas no ambiente escolar se não for associada a estratégia de divulgação e conscientização de toda a comunidade escolar.


This study aimed at characterizing the students' perception of Law 5.146/2013's implementation, whose objective is to promote healthy eating in schools in the Federal District, and to identify the barriers and facilitators that exist in adopting it, as well as the perspectives for the implementation of actions of Food and Nutrition Education (FNE) in the school environment. Fifty-two 9th grade teenagers from three public and private schools participated, distributed in six focus groups. A semi-structured script was followed with questions, validated by the Delphi technique, to find out what was being sold and consumed in the cafeterias according to the adolescents, whether they knew the law, and to assess barriers and facilitators to put the legislation into operation in the school environment. Finally, a fictitious situation was presented to the students in which they would conduct FNE actions to implement the law. The debates were recorded, transcribed, and similar speeches were grouped by Bardin's content analysis. The adolescents considered the cafeteria law to be positive but pointed out that they had not yet adapted to the legislation. They identified the price of healthy foods and the poor disclosure of the law as barriers, and the school and family were facilitators. Concerning FNE, they suggested innovative means of dissemination, such as social networks and the use of figures and colors to draw the reader's attention. Despite being well received by adolescents, the mere passing of a law is not enough to change dietary practices already adopted in the school environment, if it is not associated with a strategy of dissemination and awareness of the entire school community.

Introducción: El tipo de dieta influye directamente en el valor del pH salival, el cual es un factor importante para evitar la formación de caries. Objetivo: Evaluar el cambio del pH salival por ingesta cariogénica y no cariogénica en preescolares de una institución educativa de Huaura, Perú. Métodos: Esta investigación fue de tipo observacional, comparativo y longitudinal. El tamaño de muestra fue de 30 preescolares. Después que los niños consumieron dieta cariogénica y no cariogénica, se evaluó su pH a diferentes tiempos. Para el contraste de resultados se utilizó la prueba T Student y U de Mann-Whitney. Resultados: El pH salival con dieta no cariogénica a los cinco minutos fue 7,11 ± 0,19 y 7,09 ± 0,20, y, a los 40 minutos, 7,46 ± 0,19 y 7,42 ± 0,22, en mujeres y hombres, respectivamente. El pH salival con dieta cariogénica en mujeres fue 6,56 ± 0,21 a los cinco minutos y 7,15 ± 0,12 a los 60 minutos; mientras que, en los hombres, para iguales rangos de tiempos fue 6,47 ± 0,32 y 7,23 ± 0,22, respectivamente. Al realizar las comparaciones entre grupos de dieta cariogénica y no cariogénica se observaron diferencias muy significativas (p < 0,01). Conclusiones: Para la dieta cariogénica el pH disminuye como máximo a los cinco minutos y se restablece a partir de los 60 minutos. Para la dieta no cariogénica disminuye en el mismo tiempo pero se recupera a los 40 minutos, siendo este proceso similar en ambos géneros(AU)


Introduction: Salivary pH, an important factor in caries prevention, is under the direct influence of diet type. Objective: Evaluate salivary pH changes caused by cariogenic and non-cariogenic food intake in preschoolers from an educational institution in Huaura, Peru. Methods: An observational longitudinal comparative study was conducted of a sample of 30 preschoolers. After the children consumed cariogenic and non-cariogenic food, their salivary pH was evaluated at various times. Student's t-test and the Mann-Whitney U test were used to contrast results. Results: Salivary pH with a non-cariogenic diet at five minutes was 7.11 ± 0.19 and 7.09 ± 0.20; whereas at 40 minutes it was 7.46 ± 0.19 and 7.42 ± 0.22, in female and male participants, respectively. Salivary pH with a cariogenic diet in women was 6.56 ± 0.21 at five minutes and 7.15 ± 0.12 at 60 minutes, whereas values in men for the same time ranges were 6.47 ± 0.32 and 7.23 ± 0.22, respectively. Comparison between the cariogenic and non-cariogenic diet groups revealed very significant differences (p < 0.01). Conclusions: With a cariogenic diet, pH is reduced at five minutes maximum, and is restored as of 60 minutes. With a non-cariogenic diet, pH is reduced in the same time period, but is restored at 40 minutes. This process is similar in the two genders(AU)

Resumo Introdução A adolescência é um período marcante para a adoção de estilo de vida saudável, sendo pertinente avaliar a adesão à alimentação saudável e possíveis relações com componentes bioquímicos. Objetivo Avaliar a adequação aos 10 passos para uma alimentação saudável em adolescentes e a associação ao perfil bioquímico. Método Estudo epidemiológico, transversal e analítico, realizado com 635 adolescentes de escolas estaduais em Montes Claros, Minas Gerais. O número e a seleção dos participantes foram definidos por cálculo amostral. Por meio de questionários, foi feita a averiguação das características sociodemográficas e do consumo alimentar, enquanto foram feitas dosagens bioquímicas para determinar os parâmetros metabólicos. A adequação a uma alimentação saudável foi realizada conforme a adesão do adolescente a cada um dos passos preconizados pelo Ministério da Saúde. Foram processadas as análises descritiva, bivariada e múltipla por regressão logística. Resultados Foi observado que 70,5% dos adolescentes afirmaram consumir feijão; 57,7% relataram fazer a ingestão total de cereais, raízes, tubérculos e integrais; e 54% faziam o consumo de água. Entre os adolescentes, 1,6% consumia legumes, hortaliças e frutas, e 6,6% ingeriam carne, aves, ovos, leite e derivados. A adesão ao consumo preconizado de leite e carnes magras ou ovos (OR = 2,510) e de refrigerantes, sucos industrializados e guloseimas (OR = 1,830) foi associada ao colesterol total. Conclusão Houve baixa adesão aos 10 passos para uma alimentação saudável, e o perfil lipídico foi associado com o consumo de refrigerantes, sucos industrializados, guloseimas, leite e carnes.


Abstract Background Adolescence is a remarkable period to adopt a healthy lifestyle. It is pertinent to evaluate the adherence to healthy eating and possible relationships with biochemical components. Objective To evaluate the adequacy to the 10 steps for healthy eating in adolescents and the associated biochemical profile. Method Epidemiological, cross-sectional, analytical study conducted with 635 adolescents from public schools in the municipality of Montes Claros, state of Minas Gerais, Brazil. The number and selection of participants were defined by sample calculation. Sociodemographic characteristics and food consumption were assessed through questionnaires, whereas biochemical measurements were conducted to determine the metabolic parameters. Adequacy to a healthy diet was performed according to the adolescents' adherence to each of the steps recommended by the Ministry of Health (MS). Descriptive, bivariate and multiple regression analyses were performed. Results Food consumption among the adolescent students investigated was as follows: beans (70.5%); cereals, roots, tubers and wholegrains (57.7%); water (54.0%), vegetables, greens and fruits (1.6%); meat, poultry, eggs, milk and dairy products (6.6%). Adherence to the recommended consumption of milk and lean meat or eggs (OR=2.510) and soft drinks, processed juices and goodies (OR=1.830) was associated with total cholesterol levels. Conclusion There was low adherence to the 10 steps for healthy eating and the lipid profile was associated with consumption of soft drinks, processed juices, goodies, milk, and meat.
